Interesting idea...I think the transcription will bite you in the butt later - the question is (as I am drowning in transcriptions that I was too lazy to do at the time) do you really need to transcribe everything? I would very, very strongly recommend that you at least textually code your audio field notes as you are doing them. You really don't want to slug through hordes of MP3s that could be about anything when you get back.
Helpful software? I like Microsoft Expressions - you can tag the file after you dump it in and then you have a searchable subject index.
